Baked Chili Lime Salmon with Avocado Greek Salsa

Delicious flaky salmon with a tang, served with a quick and easy avocado Greek salsa.

Serves: 3 Prep Time: 20 minutes Total Time: 30 minutes


Chili Lime Salmon

3 thawed skin-on Salmon filets

3 TBSP Weber Chili Lime Rub

1 1/2 TBSP Avocado oil

Avocado Greek Salsa

1 medium avocado, peeled and diced

1/4 cup feta cheese

1 medium Roma tomato, diced

1/2 tsp minced garlic

2 TBSP lemon juice

2 TBSP parsley

1 TBSP oregano


1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper or tin foil.

2. In a small bowl whisk together chili lime rub and avocado oil. Brush both sides of salmon with the mixture.

3. Place salmon skin-side down on baking sheet and cook for 9-12 minutes, or until internal temperature reaches 145 degrees.

4. In a medium mixing bowl toss together tomatoes, garlic, avocado, feta, lemon juice, parsley, oregano. (Optional: add salt to taste)

5. Serve salmon topped with salsa. Serve immediately.
