Needing a quick dinner idea? Enjoy this creamy, low carb chicken dish, topped with mushrooms and spinach.
Serves: 2-3 Prep Time: 10 minutes Total Time: 50 minutes
2 large chicken breasts cut into strips.
1/2 container of chives and onion cream cheese, softened
1/8 cup olive oil
1/4 cup water
1/2 package of sliced mushrooms
1 small bag of fresh spinach
1 dash of Weber Herb and Garlic Seasoning
8 oz of shredded mozzarella cheese.
Preheat over to 375 degrees. Spray a 8x8 baking dish with cooking spray.
Lay chicken in the bottom of the pan, making sure that it does not overlap. Place spinach and mushrooms on top.
Lightly coat with Weber Herb and Garlic seasoning.
In a small mixing bowl, mix together softened cream cheese, oil and water until well combined. Pour over chicken mixture. Loosely cover with aluminum foil, do not seal.
Bake for 20 minutes. Remove aluminum foil and bake uncovered for an additional 15-20 minutes. Cover with shredded cheese and cook for another 10 minutes, or until cheese is melted.
